Sowbhagya Lakshmi is one of the chefs in Chaparai village, Araku valley. She opened a bamboo roast chicken while her four-year-old son, Babu Muna, played around. Eight years ago, when Lakshmi started selling grilled chicken with bamboo tubes for a living, there were only a few people in the area like her. Today, during the peak tourist season from November to January, there are more than 30 stalls on a small street.
To make a bamboo tube roast chicken, Lakshmi mixes the chicken with diced red onion, tomato and green pepper, then adds spices including bay leaf, ginger, coriander, chili powder, vegetable powder. smell, a homemade condiment from cloves and cinnamon. Photo: Atlas Obscura

Lakshmi also added a special red powder she called jaji puvvu, and finally a pinch of salt mixed with lemon.

After stuffing the chicken and rice into the hollow bamboo, she closed the lid with leaves and roasted for 45 minutes. When the outer green bamboo shell turned charcoal, she opened the lid, split the tube in half and prepared a delicious chicken rice serving for the guests.
Meanwhile, at a larger stall, a man named Dombo happily showed off his food. Besides the usual spices, his family has an esoteric ingredient called ghee (butter originated from ancient India). This spice will help the biryani not stick to the bamboo tube when baking.
The Adivadis discovered that the bamboo tube acts like a natural pressure cooker. When baked, the thick green bamboo stems keep the food moist, soft and protect it from outside flames. Photo: Atlas Obscura.

Just flipping bamboo tubes on the kitchen, Mr. Dombo said: “I grew up with this dish, but with a much simpler version. Every time I visit my family deep in the forest, I get to eat it ”. However, like many other tribes in Araku, Dombo's relatives later moved into the new urban area and sold forest land to newly sprouted hotels and shops.
Aside from the positive side of travel, many people also recognize the risks and challenges that come with it. Dombo said that he was very happy when grilled chicken with bamboo tubes became a specialty, but many people from all over came to try it to imitate it. Now, the bamboo tube grilled chicken specialty at Araku is no longer unique, as many non-native chefs cook this dish throughout Andhra Pradesh state. However, the chefs still hope that visitors will come here, cross the mountain to eat bamboo tube grilled chicken rice cooked by those who know it best.
