Inside a restaurant in Yangzhou, a city in China's eastern Jiangsu province, the waiter brought Anne Ewbank, an American gourmet, a plate of boiled duck eggs. It seems that this is a popular dish. But when she looked closer, Anne saw that each egg had two yolks, instead of one. That morning, she had breakfast while wondering: How can restaurants selling zaocha (morning cake tea) guarantee an unlimited supply of two yolks?

She later learned that the eggs were served with dumpling soup and sandingbao (steamed cake with bamboo shoots, chicken and pork), not by accident. These eggs come from the nearby town of Cao Biao, famous for its two-yolk duck eggs
Although commonly referred to as a suburb of Yangzhou, Gao Biao can be thought of as a city with a population of nearly one million.

The local farmers diligently raise the Cao Biao duck for generations to create the double yolk. According to a 2010 Yangzhou University study, a two-yolk egg is often damaged before hatching. If it hatches, the ducks will be severely deformed or stick together.

The farmer could immediately spot a double-yolk, though the shell is no different from single yolks. But there is one sure way for them to look inside an egg without breaking it: Shine a light into the egg, the double yolk appears as two gray shadows.

Whether the eggs are single or double yolk, the farmer then soaked in brine, packaged them, and sent them to local restaurants and eateries. The eggs are boiled and sliced, the yolks are orange-red in color, rich in oil and rich in sweetness, perfect for morning tea and cakes.

Earlier this year, Gao Biao held the 15th double yolk duck egg festival. This event spurred local investment projects such as the opening of the Chinese Duck Culture Museum in 2011, and ceremonies. The celebration is increasingly popular. If you cannot be present in Cao Biao during the annual festival in April, you can enjoy two yolk specialties at many tea houses, restaurants and eateries in town.
